When you think of Louisiana, which foods come to mind? Cajun chicken? Gumbo? Crepes?
Thanks to the Baton Rouge food truck, Fresh Junkie, Louisiana cuisine is being reinvented in a new, fast and healthy way. Fresh Junkie is a made-to-order salad market which focuses on supplying health-conscious consumers with fresh meals. In a land filled with fried chicken and endless crawdad feeds, it’s easy to see how a food truck idea such as this would stand out from the crowd.
Fresh Junkie was first founded in 2007 by owner, Pat Fellows, who saw a need in Baton Rouge for a health-focused food truck. With the city’s desire to eat healthier constantly increasing, Fellows decided to focus on creating food that tasted great but that is also healthy. He wanted to change how American’s were eating without compromising how they got their food.
In an interview conducted by blogger Tara Bennett, Fellows said, “We want to give people a chance to get healthy food fast, and it’s been going well.”
The ingredients used to make Food Junkies best-selling salads are all fresh and organic. By avoiding using preservatives in their salads, they are able to make house-made dressings and have fresh ingredients delivered daily.
“Our passion is to get people healthy, and I think over time more and more of the population is realizing that eating right and exercising leads to a more satisfying life,” stated Fellows. “You just feel better. I think that’s the biggest thing.”
Fresh Junkie will be featuring their food truck and fresh salads all three days at Fais-do-do. Some of the salads they will be serving are the Honey Lime Thai, Mediterranean Spinach, Sensation and Brickhouse. By providing these healthy options during the festival, Fresh Junkie hopes that attendees will gain an appreciation for a Louisiana food truck vendor that is being inventive and putting a new spin on what is considered “traditional” southern cuisine.
